Directions
- Preheat the oven to 450°F (230°C).
- Scrub the potatoes under running water using a clean brush or sponge. Dry them thoroughly, then rub each potato skin evenly with olive oil and a sprinkle of kosher salt. Use a fork to pierce the skin of each potato in four to five places.
- Place the prepared potatoes in the preheated oven and bake for 45 minutes to an hour, or until there is no resistance when a knife is inserted into their centers.
- While the potatoes are baking, prepare the crab mix. In a bowl, gently toss the lump crab meat with lemon juice, extra-virgin olive oil, shredded mint leaves, diced jalapeño, MSG, and sour cream. Season with salt and pepper to taste.
- In a medium-sized saucepan over medium heat, melt the butter for the alfredo sauce. Once the butter is melted and begins to bubble, add the diced onions. Sauté the onions until they soften and turn translucent, then stir in the garlic paste and cook until fragrant. Add the cream and bring to a boil. Stir in the grated Parmesan cheese and season with salt and pepper to taste. Reduce the heat to low, mix in half of the fresh parsley, and set aside the remaining parsley for garnish.
- Once the baked potatoes are done and offer no resistance when pierced, remove them from the oven and let them cool until they are warm to the touch. Slice each potato open down the middle and gently remove the flesh into a large bowl. Add the butter, salt, and pepper to the potato flesh and mash to combine.
- Gently place the potato mixture back into the empty potato skins, lightly pressing at the bottom to create a firm foundation. Top each potato with the prepared crab mixture and a sprinkle of grated Parmesan cheese. Place the stuffed potatoes on a baking sheet and return them to the oven for approximately 15 minutes or until the cheese is melted and golden.
- To serve, plate each potato and drizzle the top with a generous portion of the prepared alfredo sauce. Sprinkle with the reserved fresh parsley for a vibrant finishing touch.
