Ingredients

3 bone-in, skin-on chicken quarters

1 tablespoon smoked paprika

Kosher salt to taste

freshly ground black pepper to taste

3 tablespoons unsalted butter

3 cloves minced garlic

1 cup chicken broth
-
1/4 cup freshly grated Parmesan

1 lemon juice
-
1 teaspoon dried thyme

2 cups chopped baby spinach
Directions
Preheat your oven to 400F.
Season your chicken quarters with smoked paprika, salt, and pepper to taste.
Melt 2 tablespoons of butter in a large oven-proof skillet over medium-high heat.
Add your seasoned chicken quarters, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side.
Remove from skillet and set aside.Melt the remaining tablespoon of butter in the skillet.
Add minced garlic and cook until fragrant for about 1-2 minutes.
Stir in chicken broth, heavy cream, Parmesan cheese, lemon juice, and thyme.
Season with salt and pepper to taste.Bring the sauce to a boil and then reduce heat.
Stir in chopped spinach and let it simmer until the sauce has slightly thickened and the spinach has wilted, about 3-5 minutes.
Return the chicken quarters to the skillet and place it into the preheated oven.
Bake for 25-30 minutes or until the chicken is cooked through and has reached an internal temperature of 165F
